Ham, Eggs, and Hashbrowns (Serves 4-6 depending on portions determined by you)
Unless you use expensive egg crystals or freeze dried eggs these will taste different than you are used to, but if the eggs are good, they should still be palatable. Augeson Farms brand eggs may not be good. Mine have never been. I understand that they were not fresh and good when they were canned.
- Place potato shreds in a bowl (about ½ cup per person) and cover them with warm water. (Let sit 20-30 minutes)
- In another bowl mix egg powder and water according to directions.
- Open spam or other canned meat and cut it in slices or break it into chunks the way your family likes it.
- Get your frying pan or grill ready with a layere of oil about 1/8” thick.
- When the potato shreds are soft enough to bend, drain the water off as much as possible. Pressing the water out or draining on a paper or other towel is a good idea. Turn on the heat. When the oil is warm, put the shreds in it. With a pancake turner, keep the potatoes cooking all over. When they start to brown put the spam and eggs on the pan to cook too. They will also need turning. Some people like their things mixed while others like them separate. You will know how your family likes theirs. Use salt and pepper as needed on the eggs and hash browns. Serve warm
Island Chicken Pasta Salad – Serves 2-4
- 1 1/2 cup of your favorite salad pasta (I like mini bows for this, but storage mac works too.)
- 3 5oz. cans of chicken
- 1 15 oz can mandarin oranges
- 1 15oz can of pineapple tidbits
- 1 ½ cups lentil sprouts
- 1 Tbsp dried chives
- ¾ cup Brianna’s Mandarin salad dressing or dressing below.
Make the dressing first. Boil 3 cups of water. Add pasta. Cook until barely tender through. Drain and rinse in cold water. Set aside. Drain fruit, reserving juice. Drain chicken.Add fruit, sprouts, and chives to pasta. Use Brianna’s Mandarin dressing or the one below. Mix the following dressing and add it to the salad, mixing gently.
Dressing
2 Tbsp pineapple juice
1 Tbsp mandarin orange juice
½ cup mayonnaise
A dash of thyme
A dash of garlic powder
1/8 tsp ginger
½ tsp vinegar
¼ tsp salt
Mix ingredients well and let sit while you make the salad to absorb flavors
Mini Chip Muffins – Makes 12
2 cups flour
2 tsp. Baking powder
1 tsp baking soda
½ tsp salt
½ cup sugar
2 Tbsps. HSC milk powder
1/3 cup vegetable oil
1 3.9oz. fruit cup of applesauce
1 tsp vanilla
2/3 cup of water
½ cup of mini chocolate chips
Heat oven to 375°
Mix dry ingredients together. In another container, mix applesauce, oil, vanilla, and water. Pour water mixture into the dry ingredients. Stir until almost moistened (little skiffs of flour left) Add chocolate chips and stir just until flour is moistened and chips distributed. Spoon batter into greased or paper lined muffin cups. Bake for 15 minutes or until tops are lightly browned. Remove from oven and cool on racks.
Shepherd’s Pie – serves 2-4
- 1 15oz.can of green beans
- 1 15oz. can of beef
- 1 can of either cream of mushroom or tomato soup (Either is good. My sister does one and I do the other.)
- Either potato flakes or pearls made to serve 6 according to directions on package
- ¾ cup of cheese (hydrated if you are using freeze dried cheese)
Open all the cans. Drain the beans. In a small casserole dish or rectangular cake pan cover the bottom with the green beans. Reserve the broth off the beef and remove any fat you don’t want. Spread the beef on top of the beans. Mix 2-3 Tbsp of broth from beef with the soup you are using. Cover the bean and beef layers with soup. Make a batch of mashed potatoes for 6 using directions on package. (If using potato flakes, butter powder adds a nice flavor when mixes with powdered milk.) Put the potatoes on top of the soup in spoonful’s or scoops so the soup cooks between them like a gravy. Bake for 20 minutes in a 350° oven. Sprinkle cheese on top and return to oven just until the cheese melts.

Smorgasbord Oatmeal
There are so many things to put with cooked cereal that the fun is in the freedom to add. While some people like it with butter and salt, many others want something sweet and milk. My kids liked the idea of having a choice. You might offer three of the following: cinnamon and sugar, brown sugar, molasis, maple syrup, jam, dried fruit like rasins or apple bits, nuts, seeds, coconut, or chocolate chips.

The biggest problem with powdered milk is that it is skim milk. I have found that if I mix a quart of milk as directed in warm water in a quick blender and add half a cup of shelf stable cream, then let it sit in the refrigerator or a very cool place over night or until chilled it isn’t bad. I do still use HSC milk.
*Save ½ cup milk for dinner.

Ingredients for each mug

- ⅓ cup (1 ½ oz/45g) pasta
- 1 cup (8oz / 230g) water, hot
- 2 teaspoons cornstarch
- 4 tablespoons pasta sauce (tomato sauce)
- 2 tablespoons milk *I like cream even better.
- * Add salt and pepper to taste.
Instructions
- In a large microwavable mug or large bowl add in the pasta and the water. You need a large mug as the water will boil up.
- Microwave for roughly another 3 ½ minutes or until tender. You want the pasta to be fully cooked. (timing is based on my 1200W microwave so your timing might vary)
- Pour off the remaining cooking water.
- Stir in the cornstarch, tomato sauce and milk and microwave for a final 60 seconds or until the sauce thickens. The cornstarch is the thickener for the sauce.
- Stir well, season with salt and pepper and enjoy.
Notes
Cooking time will vary greatly depending on your microwave and the width and depth of the mug.
Always keep a close eye on your mug while in the microwave so it doesn’t over flow or over cook.
*If I am cooking for more than one person I like to put the pasta in a pan to cook it and keep it from boiling over in the microwave. When I drain the water off I can put it in the mugs if desired.
Simple Salmon Patties Serves 4
1 15 oz. can of salmon
1 egg or 3 Tbsp. water and 1 Tbsp. ground flax seed (or an egg)
1/3 bread crumbs or fine oatmeal
½ tsp. of your favorite herbs (I like dill and a little lemon pepper, but my husband prefers thyme. Rosemary or tarragon are fun. Some people like onion. All-purpose seasoning can be good too.)
Mix together with hands. Form two patties. Fry over medium heat on oiled pan browning both sides.
*This can be served plain, with a mayonnaise sauce, or as a burger.
Creamy Macaroni and Cheese Serves 4
1 cup macaroni
1 15 oz. jar of Cheese Whiz
½ cup milk
Salt to taste
Bring 3 cups of water to a boil in a medium sauce pan. Add the macaroni. When it starts to boil, turn the temperature down to simmer. Cook the macaroni until just tender through (10-15 minutes if you are using storage center macaroni) When it is done, drain off the water and add the milk and cheese whiz. Stir and warm over low heat until heated through.
Alternative cheese sauce:
1 ½ cups of water from macaroni
1 Tbsp. vegetable oil (not olive)
¼ cup milk powder
½ cup cheese powder
1 Tbsps. flour
¾ tsp salt
¼ tsp onion powder
1/8 tsp dry mustard powder
Mix vigorously or in a blender until all blended and smooth. If macaroni is in a colander, use the same pan you cooked it in to heat this mixture. Cook it over medium heat while stirring until it thickens. Then stir in the pasta. This will thicken more as it cools.
